I coated half of the hamburger patties in breadcrumbs for baked “chicken fried steaks” and left the other half plain. I lined them onto cookie sheets and placed them in the oven until cooked through.
From these three meats I was able to prepare several different recipes and package them to freeze or store in the refrigerator. I also made a large amount of mashed potatoes. By adding light cream cheese, it became easier to reheat and maintain the creamy texture. The following are the most common recipes, but the options are limitless.
• Chicken: Chicken and noodles, BBQ chicken, chicken parmesan and chicken and rice.
• Beef: Roast beef, Beef and noodles, BBQ beef, Beef and vegetable stir fry

I realized that when I came home I could pick any of these meals to warm up and serve. I knew how the food was prepared and where it came from, something I could not say before with my frequent pre-packaged meals.
Preparation only took two to three hours and gave me more than enough food for the week. Of course this could be adjusted to suit the size and tastes of your family.
